🛒 Ingredients (Makes 12 nests)

Nests:

  • 7 oz (200 g) kataifi dough
  • 1/3 cup (80 g) melted butter
  • 1 tbsp powdered sugar

Vanilla Cream:

  • 2 cups (480 ml) whole milk
  • 2 tbsp all-purpose flour
  • 2 tbsp cornstarch
  • 1/2 cup (100 g) granulated sugar
  • 1 egg
  • 1 tsp vanilla extract

Toppings:

  • Strawberries, blueberries, mint leaves

🍳 Instructions

1. Make the Nests

Preheat oven to 350°F (175°C). Gently pull apart and fluff the kataifi dough, then toss it with melted butter and powdered sugar.

Press small handfuls into greased muffin tins to form nest shapes. Bake for 15 minutes, or until golden and crisp. Let cool.

2. Make the Cream

In a saucepan, whisk together milk, flour, cornstarch, sugar, and egg. Cook over medium heat, stirring constantly, until thickened (about 10–12 minutes). Remove from heat and stir in vanilla. Chill until ready to use.

3. Assemble

Once nests are cooled and cream is chilled, fill each nest with a spoonful of custard. Top with fresh fruit and a small mint leaf.
